Maria Teresa Bertoldo Pacheco

Bachelor in Biology (1985). She has a Master's degree (1991) in food technology and doctorate degree (1996) in Nutritional Science at the State University of Campinas (UNICAMP). She was a professor at the Federal University of Goiás (1996) and the University of São Paulo (FZEA/2002). Participated in the working group involving food labeling for phenylketonurics at ANVISA.

Currently works as a Scientific Researcher VI at the Institute of Food Technology (Ital), as a professor in the postgraduate course of Food Science and Technology, as vice-president of the Ital Internal Biosafety Committee, as a Consultant Member of ILSI Brazil, as researcher of Technological Development and Innovative Extension at CNPq and Coordinator of the Research Center of the Integrated Biotechnological Platform for Healthy Ingredients (PBIS).

As a scientific researcher, she has been coordinating technological advisory projects for companies in the food sector, as well as national and international research projects with participation of private companies. She has also been working with project management using agile methodologies.

Experience in the area of Food Science and Technology, more specifically with research regarding proteins, peptides and the use of agroindustry byproducts to extract bioactive compounds aimed at health.
